Giant + Chewy Peanut Butter Chocolate Chip Cookie

What you'll need:
1 Cooggies chocolate chip cookie baking mix
1/2 cup creamy unsweetened peanut butter at room temperature ( we use dry roasted salted peanut butter)
1/2 cup vegan or non-vegan unsalted butter at room temperature ( we use vegan)
1 lg egg (optional we made this batch without egg, or egg substitute)
2 tsp vanilla extract
4 Tbsp.  water
1/2 cup dry roasted peanuts chopped
in a bowl and with an electric mixer, mix the peanut butter, the butter, the egg if using, the vanilla extract
Add the dry mix and the water. Mix until well combined. 
Fold in the chopped peanuts
With wet hands form balls 1/4 cup size each, and place them in a sheet pan
Let the formed balls rest for 20 minutes before baking on the sheet pan.
When ready to bake, flatten the balls with your hand to desired thickness
Bake for 22 to 25 minutes
Let them cool down completely before eating them, to avoid the cookies breaking
