Cottage Cheese Cashew Flour Pancake

1.5 cups of Cashew Flour Pancake and Waffle mix

2 eggs

1/2 cottage cheese (we love good culture brand)

1/2 cup milk of your choice

Mix wet ingredients

Add dry mix and fold until well combined

Preheat a non-stick pan or a greased skillet to Med-Low heat (let it get to this temp before pouring the batter)

Add 1/4 cup of batter to the pan and cook until bubbles form and the outer edges are starting to get firm (1-2 min)

Flip and cook for and additional 1-2 min.

Top with your favorite fruits, berries, maple syrup, yogurt or what your heart desires!
