Cherry Chocolate chips Vegan Muffins

Makes 12 standard size muffins

What you'll need:

1 Cooggies Cake & Muffin Bake Mix

2 Flax eggs (2 1/2 tbsp flax meal +  6 tbsp water, mix well & let sit 15 minutes until thickens or overnight in refrigerator)

1/2 cup chocolate chips

1 cup unsweetened plain coconut yogurt

1/2 cup avocado oil or your choice of oil

2 tsp vanilla extract

3/4 cup brewed coffee

1/2 cup water

Cherry jam (we used Bone Maman - you can change to the berry of choice)

Powder sugar for dusting


- Preheat oven to 350 degrees and prepare your standard size cupcake pan with cupcake liners

- With an electric mixer, mix the flax egg, oil, vanilla, coffee, and water until smooth and well combined. Add the Cake and Muffin Bake Mix mix and continue to mix until smooth.

- Pour the batter into the prepared cupcake liners and bake for 30-35 minutes or until toothpick comes out clean

- Allow to cool completely before dusting with the powder sugar, otherwise the sugar will melt and be absorbed

- Once cooled the muffin will deflate in the middle. Dust the muffin with the powdered sugar and add a dollop of cherry jam on top

- Enjoy for breakfast or really any time of day! :)
