Blueberry-Thyme and lemon Yogurt Cake and Muffin Mix loaf

Our blueberry-thyme yogurt loaf! is like a flavor party in every slice. Recipe: Preheat oven @ 350 cook 55-60 min

1 Cake and Muffin Bake Mix Pouch

1-2 tsp of finely fresh thyme

Zest of one lg lemon

1/2 cup plain yogurt at room temperature

3 lg eggs

1/4 cup neutral oil, ghee or melted butter

1 cup fresh or frozen blueberries

Generously butter or oil the inside of an 8 1/2 x 4 1/2 inch loaf pan (21 x 11 cm)

(If your loaf pan is a little bigger, check the cake for doneness earlier as it might bake faster)

1) mix the Cake and Muffin Bake Miix with the thyme and the lemon zest

2) Add yogurt, eggs and oil to the dry mix (1 egg at a time)

3) Fold the blueberries with a  spatula

4) Bake
