Apple Cider Donuts

Apple Cider Donuts (yields 8- 1/4 cup donuts)

What you'll need:

1 1/3 cups Cooggies Cashew Flour Pancake and Waffle mix
1 tbsp baking powder (in lieu of the eggs or egg replacer)
1 tsp ground cinnamon
2 tbsp melted vegan butter or oil
3/4 cup unsweetened plain almond yogurt
1 cup apple cider (NOT THE VINEGAR)
Melted vegan butter
1 tbsp coconut sugar mixed with 1/2 tsp cinnamon powder.
Preheat oven to 375 F. Grease a 6-donut hole pan
Mix butter or oil, yogurt, apple cider with a whisk
Add pancake mix, baking powder, and cinnamon, mix until light thick consistency, about 2-3 minutes
Let the mixture rest for 20 minutes
Pour mixture into greased 6 donut hole pan, using a 1/4 measuring cup, and leaving the hole in the middle visible
Bake for 25 minutes. 
Let them cool down a little bit before coating.
When ready to coat, dip the donuts in the melted butter, and the in the sugar cinnamon mix.
