Pancakes Trio with Fruit Topping

 

What you need:

1 pan or griddle on med to high heat

1 1/3 cups Cooggies Cashew flour Pancake and Waffle Mix

2 eggs or egg replacer if making it vegan

1 ½ cups milk or milk alternative

2 Tbsp. oil.

For the toppings:

2 tbsp. semisweet chocolate chips

Sliced bananas

Fresh blueberries

Fresh strawberries cut in the middle lengthwise

Crunchy roasted nuts

Creamy nut butter

Greek or plant based yogurt plain and unsweetened

Lemon zest

Maple syrup

Directions:

In a microwave safe dish add the 2 tbsp. semisweet chocolate chips with 1 tbsp. water and microwave for 30 seconds or until the chocolate is melted. Set aside.

With a fork or a whisk, mix the wet ingredients: eggs, milk and oil.

Add the pancake and waffle mix. Mix until well combined.

Cook the pancakes in the hot pan or griddle using a ¼ cup measuring cup.

Assemble:

Take 1 or 2 pancakes and top them with these different toppings:

1) Creamy nut butter, sliced bananas, crunchy nuts, and drizzle with the melted chocolate.

2) Spread the pancakes with a dollop of Greek or plant based yogurt, place the blueberries on top, the lemon zest and drizzle with maple syrup.

3) Drizzle pancakes with maple syrup, put the strawberries dipped in the melted chocolate on top, drizzle with more maple syrup.
