Olive Oil Brownie Cookies
8 oz Semisweet chocolate chips or chopped dark chocolate
1/4 cup cold pressed virgin olive oil
2 flax eggs (3 tbsp flax seed meal + 6 tbsp water) or 2 eggs for a non vegan recipe
1 tsp Vanilla extract
1) For the flax eggs: whisk the flax seed meal with the water, let it rest for about 10-15 minutes until it has a thick consistency
2) Melt the chocolate with the olive oil in a heat proof bowl over a saucepan of simmering water. Make sure the water does not touch the bowl. 
Mix until smooth and well combined. Let it cool down a bit before adding it to the dry mix.
3) In a separate bowl, add the baking mix, the flax eggs or the regular eggs, and the vanilla extract. Mix until combined with an electric mixer (hand mixer, or whatever mixer you have)
4) Add the chocolate olive oil mixture, and mix until all is well incorporated
5) Scoop 2 Tbsp-size scoops on prepared sheet pan 3 inches apart. Flatten them a little with your fingers. Put flaky salt on top of each cookie, bake for 8-10 minutes until tops have cracked. 
Yields 15 delicious Brookies!
